|Soba Sensation with Homemade Buckwheat Noodles|
The sauce is easy to prepare and makes an excellent lunch option for work on cold noodles.
Soba Sensation Sauce adapted from Angelica Kitchen
Makes 1.5 cups
1 tbsp peeled and minced ginger
1 tbsp prepared Dijon mustard
2 tbsp cup brown rice vinegar
2 tbsp natural soy sauce
2 tbsp brown rice syrup
1 tbsp toasted sesame oil
3/4 cup tahini
1/3 cup hot water (or to desired consistency)
1/4 tsp cayenne pepper (or to taste)
Pour all ingredients into a food processor or blender and puree until creamy.
