1 tsp cornflour
4 tbs water
2 tbs groundnut, or any other flavourless oil
1 stick celery, chopped
1/4 cup sweetcorn (frozen will do)
1/2 cup pineapple, cut into 1″ chunks
1/4 of a cucumber, cut into small dice
1 tomato, chopped into 1″ pieces
1 red chilli, chopped finely
2 tbs soya sauce
1 tbs sucanat/unrefined sugar
- Whisk the cornflour together with the water to make a paste and set aside.
- Heat the oil in a wok or frying pan and fry the celery and mixed peppers for a few minutes. add the sweetcorn and fry, stirring regularly, for another few minutes, then add the pineapple, cucumber and tomato. fry briefly, for another minute or two.
- Now add the soya sauce, sugar and chilli and stir to mix. Then, turning the heat down to medium-low add in the cornflour paste and stir continuously for a minute or so as the sauce thickens. Serve.
